Tarragon *Perennial Herb A 2 1/2 ft. plant which is used in making vinegar and for seasoning many dishes. Start seed indoors in a sunny location 6 weeks before transplanting outdoors. Or sow directly in the garden in well drained soil in full sun after danger of frost is past. Keep well weeded and watered. Pick leaves as needed. Make a first cutting of leaves in early summer when the new stems are about a foot long. These are tender and succulent and can be used fresh or dried. Make a second cutting in late summer after the plants have branched and the stems and leaves are less succulent. Cut the plants to within a few inches of the ground before the first fall frost.
