Peppermint *Perennial Herb* Germination: 12-16 days Sow seeds directly in the garden in full sun 1/16 in deep in ordinary well-drained soil. Thin plants to 12 in. apart when they are 2 in. tall. Can be started indoors near a sunny window 8-10 weeks before transplanting to the garden. Ideally the soil should be fertile and full of humus. Clay soil is also good, but mint does not need anything very special so long as it manages to stay reasonably moist. Peppermint also does well in either sun or partial shade. It forms a luxuriant summer border along the north foundation wall of a house. Water in dry weather and pull out any weeds that are strong enough to get a foothold in the mint thicket. Nip off 6-10 in stem tips regularly to keep the plants from getting too leggy and going to seed. Thin out the bed every two to three years. Mint can be dried by hanging leafy stems upside down in a dark, dry room. Peppermint makes a pleasing tea and is an unusual seasoning for meats, salads.
